Gassosa is an historical lemon-flavored fizzy soft drink, widely popular in Italy. The spelling slightly changes across Italy, varying from gasosa, gazosa and gazzosa.
It can be mixed with other drinks to make cocktails, for example the Paccatello (gassosa and wine) and the Panachè or Radler (gassosa and beer).
It was the first drink produced about 100 years ago by Enrico Paoletti, the founder the Paoletti Company. It was served in his tavern in Folignano (AP), mixed with red wine. Customer used to ask for “a quarter of wine and gassosa”, and the recipe has never been changed.
In July 2010, the product was included by Gambero Rosso, an Italian food and wine publishing group, in its monthly magazine among the top 10 Italian gassosa drinks. It goes well with any dish thanks to the delicate lemon flavor combined with a slight sweetness.
